This is a one-day-only experience showcasing Peru's local Chinese cuisine known as chifa. Born from the history of immigration from Gaungdong, China to Peru's capital, Lima, this cuisine blends Cantonese cooking techniques with traditional Peruvian flavours.
The menu is all about heat, crunch and clever technique, from crispy pork and chicken wantans with tamarind and aji amarillo, to XO scallops tangled in vermicelli and cured cobia dressed in zingy rocoto oil.
